Tom Carswood was a friend of Ronnie Bailey and a restaurateur who owned two flash establishments in London. In November 2021, Ronnie was highly impressed by a dining menu that chef Danny Tomlinson had created for the Viaduct Bistro and alerted Tom to his talents, suggesting he come north to Weatherfield to sample the wares for himself.
Tom was highly impressed with the meal presented to him and he introduced himself to Danny, telling him his award-winning restaurants had a famous clientele and he made him an offer to run a new place he was opening a new place in north London at a far higher salary than he earned at the bistro. Danny asked for time to think over the out-of-the-blue offer and Tom handed over his business card, saying he only wanted him if he was 100% committed. Wanting to be near his boyfriend James Bailey, Danny initially turned down the offer but James convinced him to change his mind once he'd heard about the opportunity. With his own footballing career at Weatherfield County FC blossoming, the two decide to try a long-distance relationship.
